We’re proud to share that Collaborate Management now represents Henry Onesemo, a globally recognised chef whose work is grounded in Samoan culture, care, and a clear sense of purpose. Based in Auckland, Henry and wife Debby have been quietly building something special, TALA - the world’s only fine-dining Samoan restaurant. Henry draws from his Samoan heritage and translates it into food that carries meaning, flavour, and well deserved recognitition.
That work has recently been recognised on a global stage. Henry was acknowledged by the The Best Chef Awards, earning international attention and placing his name alongside chefs from some of the most respected kitchens in the world. For a Samoan chef from Aotearoa, it’s a moment that speaks to both craft and representation.
What stands out is how personal his journey is. Henry’s cooking reflects family, place, and memory, shaped by traditional Samoan techniques and a modern restaurant setting. It’s not about spectacle. It’s about telling stories through food and inviting people to sit with them, even briefly.
Beyond the awards, Henry is deeply committed to opening doors for others. He talks openly about creating pathways for Pacific talent, mentoring young chefs, and making the industry feel more accessible. That sense of responsibility carries through everything he does, from the kitchen to the wider conversation around food and culture.
